Makes about 200ml
250g red chillies, trimmed
3 garlic cloves, roughly chopped
100g light brown sugar
1 dsp white wine vinegar
Salt to season
Bring all ingredients to boil together in small pan. Simmer over medium heat for ~5 minutes (until soft). Blend and season before returning to pan to simmer for ~10 minutes. Refridgerate once cool.
