Mango Curry

Serves 2, ~30 minutes.

2 chicken/turkey breasts (skinless)
1.5 tsp mild curry paste
100g broccoli, chopped
100g cauliflower, chopped
1.5 tsp lemon/lime juice
125ml coconut milk
75ml water
1 vegetable stock cube
1.5 tsp mango chutney
Half a mango, sliced

Dice the meat and lightly fry until browned. Add remaining ingredients except mango, stirring until the mixture comes to the boil. Add the sliced mango and heat for ~2 minutes.
